Personally I learned a heap from my copy of
The Complete FreeBSD, although I believe it has dated somewhat, although a new version has been released.
The book given the most airtime at present is
Absolute FreeBSD.
Having a Dead-tree edition of the
Handbook is also useful if you like that kind of thing.
