Now I can also answer your EFI/GPT question. The efifb(4) device existence is used by the install script for its default MBR or GPT decision. GPT is the default for EFI booting, but as we can see from the example installation media above, this is not a hard requirement. The MBR/EFI combination is normally intended for broadly bootable installation media. You are taking advantage of this flexibility for this custom installation.
