I can't help you with edonkey... However I can point you into another direction: MLDonkey.
MLDonkey is an open source, free software multi-network peer-to-peer application. Currently the following protocols are supported: eDonkey, Overnet, Bittorrent, Gnutella, Gnutella2, Fasttrack, FileTP and Kademlia.
I use it on a headless server and connect to it via a web browser from anywhere.

MLDonkey can also be setup to be administrated via a GUI interface.
