Because your choice of WM will determine just how much GIMPs traditional interface throws you off. Windows (and most that default to) can be made better, by removing the task bar or telling it not to collapse multiple buttons into one menu.
I think I would prefer a single window if having to work in GIMP a heavy lot, but since it often "Merges" with my work flow, as I emulate a computers pre-emptive multitasking, the ability to array windows side by side is helpful: keep an eye on xyz while using GIMP. You can't do that with an interface like the old GIMPShop.
Freedom, of choice however, is a great thing in general.
