Default add another partition?

I have a second harddrive with a partition that I want to use for backup in freebsd, how can I format it and use it in my network with both M$ and Apple computers and Slackware, is it vfat to use as filesystem or can I use UFS?

I believe that the partition type is less important than the services you enable on the machine that hosts the second drive. Below are some links on the Network File System
