Of CDs, yes. Just put a CD in the drive, and use:
# dd if=/dev/acd0 of=/path/to/your.iso bs=2048

This is possible as the filesystem on the CD is iso9660, and you are just making a direct bit-for-bit copy of it.

But you can't use dd to create an iso of a directory tree on your harddrive.
