Default Mailserver for websites

Hi all,

I've got web server that handles 4 different sites and on these sites I've got a contact form for sending emails.
What software and steps do I need to take in order to to get these sites to send emails?
I've never set up a mail server before so I'm not sure what to do. Right now I've got Postfix installed, but I haven't configured it yet.
