I do not understand your question, Philippe.

Are you asking, "How do I update from -release to -stable?"
  • OpenBSD users can apply published errata patches against -release source. This is not the -stable branch, but does include the most critical, broadly needed patches.
  • OpenBSD users can obtain the -stable branch of source code and build it themselves, as described in the OpenBSD FAQ chapter, Building the System from Source.
  • If you are looking for a binary distribution of the OpenBSD -stable branch, the company M:Tier offers this as a service, with both free and fee-based options. See https://stable.mtier.org
Are you asking, "Which release of OpenBSD will have the least problems for me?"
  • Only the most recent two releases are supported by the Project. At this time, that is 6.0 and 5.9.
  • The Project's FAQ -- which contains official "how to" guidance -- will only support the most recent release. (6.0)
  • The prior release does not have online documentation other than man pages. It is supported for break/fix only. (5.9)
Are you trying to report a problem when you state, "...it's not stable"?
  • We can only help you with problems if they are described.

Default stable versions

If you can provide more detail as to "what problems" you are experiencing, the
experts here might be able to provide a response.

What is the specific nature of the problem/s you are having?
If applicable post your dmesg
State version currently using, and reasons you suspect stability issues.

Remember support here generally is limited to recent releases.
The releases most stable should be the latest with exceptions
that sometimes concern critical updates.

It is "generally" recommended that production or critical
systems be the latest
stable release i.e. Ver 6.0

Looks like Jiggimi and i responded at the same time
please give his response more weight as his answer is
more accurate

Before you responding to any of the valid responses above, it would be valuable for you to familiarize yourself with OpenBSD's flavors described in the FAQ:

http://www.openbsd.org/faq/faq5.html#Flavors

Understanding the difference is important to answering your question.
