edonkey n00b question
How do I get edonkey up and running?

I can't help you with edonkey... However I can point you into another direction: MLDonkey.
MLDonkey is an open source, free software multi-network peer-to-peer application. Currently the following protocols are supported: eDonkey, Overnet, Bittorrent, Gnutella, Gnutella2, Fasttrack, FileTP and Kademlia. I use it on a headless server and connect to it via a web browser from anywhere. Nice how-to, tangram
I used to be a rtorrent fan, until I know mldonkey Apart from working very well with torrent and edonkey protocol, I really like the fact that mldonkey supports connecting to more than 1 servers. Just one thing, I have never tried Gnutella successfully. I never have any result found from other gnutella clients when I do a search. Does it work for you, tangram?

As for Gnutella network... I haven't use it. 90% of the times I use ed2k network and the remaining time I use the bitorrent network. But make sure you've compiled it with Gnutella support and browse the settings make sure it is enabled. Also take a look here http://mldonkey.sourceforge.net/Gnutella for the project's info on Gnutella support. Hope it helps.
