I used to deploy -stable, in order to manage this small farm, and had two build systems, for i386 and amd64. Deploying a syspatch(8) update is much faster and easier than building a -stable release(8) twice, and then running the upgrade scripts on each system.
And -stable builds are still an available solution should they be needed.
