The problem is that very few non-IT orgs are open about what they run on. Vast majority isn't and, well, usually go with do-all-for-me solutions like "serverless" hosting so they'd have nothing to show anyway. And those who run on their hardware usually find such information simply too irrelevant to share with.

What I want to tell ye, shortly: I really doubt to find such information anywhere

I'd say if you really want to know badly enough, you could skim through the various supporters and donators for OpenBSD and The OpenBSD Foundation on their respective websites, or go to any of the various meet-ups and hackathons.

It's not really as if it's a secret, but it's also a weird thing for any sysadmins or organizations to just go around saying what they use to run their stacks or what they implement in their stacks. Irrelevant, standard things, sure. I don't think anyone nowadays considers saying something like "I use Nginx" as much of a security risk. It's either Apache or Nginx or both and has been for a long time. It's the same with operating systems. If you're into security or privacy you're either using Linux or BSD. There's not a lot of guesswork there, and there's not much to hide, but I think out of good practice or perhaps tradecraft, a lot of people hesitate to openly admit those kinds of things.
